Tunnel cooker
The SIDE tunnel cooker is designed for the pre-cooking of fresh pasta by immersion in boiling water. It is particularly suitable for ravioli, gnocchi, lasagna, and other formats that require thermal treatment before packaging or freezing.
The product is immersed in a boiling water tank, where a stainless steel flighted belt moves it forward, ensuring it remains submerged for the required cooking time.
At the end of the cycle, the pasta is discharged into a second tank filled with cold water, which serves to immediately stop the cooking process. A second stainless steel belt is installed in this tank to continuously transport the product out.
To ensure a safe and hygienic working environment, the machine is also equipped with extraction hoods to remove excess steam generated during cooking.
All process parameters – temperature, dwell time, belt speed – are automatically managed via PLC, with the ability to store recipes for various products.
