Rotary cooker
The SIDE rotary cooker is a compact solution for the pre-cooking of fresh pasta, serving as an alternative to traditional tunnel cookers. It is designed to process products such as ravioli, gnocchi, lasagna, and other formats, ensuring uniform cooking in a reduced footprint.
Unlike belt systems, this machine features a horizontal rotating drum in stainless steel, with an internal helical screw that gently moves the product along the cooking path.
At the bottom of the drum, circulating hot water provides the necessary heat for cooking. The combination of drum rotation and screw movement ensures continuous and gentle product advancement, preventing any damage.
At the end of the process, the product is discharged into a cold water cooling tank or into a rotary cooler, built with the same structure as the cooker but filled with cold water.
