Trabatto - Vibrating pre-dryer
The SIDE trabatto is a machine used for the pre-drying of fresh pasta, essential for stabilizing the product before the next stages of the production line, such as cooling, freezing, or packaging.
It consists of a series of overlapping vibrating trays, made of stainless steel, that keep the pasta in motion while advancing through the system. The product travels across the different levels in a continuous flow and is exposed to temperature-controlled hot air, which provides a surface drying treatment commonly referred to as "crusting".
This system ensures uniform heat distribution, prevents pasta from sticking, and improves its surface texture.
